Vegetarian French Onion Soup



 Vegetarian French Onion Soup

Fixings:
3 enormous White Onions (approx 700g),
3 enormous Red Onions (approx 700g),
2 Tablespoons Butter,
4 Tablespoons Olive Oil,
1 Teaspoon Sugar,
1/2 Teaspoon Salt,
2 Cloves Garlic, minced,
1/2 cup (120ml) dry White Wine,
8 cups (1.8 liters) Low Sodium Vegetable Stock (click here for a custom made adaptation),
2 Bay Leaves,
4-6 branches Fresh Thyme,
1/2 Teaspoon Black Pepper.

For garnish
French bread cut,
Swiss Gruyere cheddar.

Guidance

1. Strip and cut the onions in half lengthways. Place every half level side down and cut into strips around 1/4 wide. They will resemble little semi circles as they self-destruct.

2. Heat the spread and olive oil on a medium/low hotness until the margarine is totally softened. Add the onion, mix to cover then, at that point, cover and let cook for 10 minutes. The hotness should be low an adequate number of that the onions don't brown yet start to get delicate.   • 1 loaf
  • 1 garlic clove, cut down the middle longwise
  • 2 teaspoons sherry, ideally Fino or Manzanilla
  • 4 ounces Gruyère cheddar, ground (around 1 cup)
  • Unique gear:
  • kitchen twine, six 8-ounce or four 16-ounce stove safe ramekins or bowls (discretionary)

French Onion Soup PREPARATION

Mary Berry's French Onion Soup with Mustard Cheese Croûtes

50g (2oz) margarine
1 tbsp olive oil
6 enormous white onions, daintily cut (see tip)
1½ tbsp caster sugar
200ml (7fl oz) white wine
2 liters (3½ pints) rich meat stock or vegetable stock (see tip)
3 straight leaves
1 branch of rosemary
salt and newly ground dark pepper

For the croûtes:

½ slight loaf
Dijon mustard, for spreading
25g (1oz) Gruyére cheddar, ground

Guidelines
